Two pasta recipes

I've had both of these in the last week, and both were delicious. Both serve 2 (or 1 person over two nights with fresh pasta).

Leeks & Mackerel
4 small leeks or 2 large ones, sliced and washed
1 sm tin of mackerel in olive oil
2 tsp creme fraiche
1 tsp dijon mustard
200g pasta

Put the pasta on to boil. Add a little bit of the mackerel oil to a pan, and sautee the leeks until they're soft, and slightly caramelised on the edges. Add the mackerel and warm through. If keeping for a second night, take half of the mackerel/leek mixture out at this point. Otherwise, add the creme fraiche, dijon and the pasta. Stir to combine and serve.

Sausage with Kale & Parmesan
4-6 sausages, either raw or leftover (depends how hungry you are)
200g kale
2 tbs creme fraiche
parmesan

If the sausages are raw, slice them and start them in the pan first. If not, start the kale in a little bit of olive oil (I kept the lid on the pan). Start the pasta. Once the kale is wilted, add the sausages to brown further and warm through. When it's all warmed up and cooked, add the creme fraiche and the pasta, and serve. Grate the parmesan over the top.
